Thomas Febbraio, Co-Founder, Developer, Restaurateur & Principal

Boasting more than 30 years of experience in the industry, Thomas Febbraio is a proven dining connoisseur and restaurant business expert. Recognizing the demand for innovative concepts, he has opened a number of successful and nationally acclaimed restaurants in the Tri-state area. His extensive background in the hospitality industry has allowed him to facilitate the sale and leasing of more than 35 restaurants in the past four years. These include Mecha Noodle Bar, Geronimo’s Restaurant & Tequila Bar, Dolce Cubano, Malto Wine Bar and Hana Tokyo, to name a few. He now brings his expertise to South Florida as the co-founder and developer for B Square Burgers & Booze.

Febbraio’s career began in 1979 with the purchase of Tommy’s Restaurant, an Italian eatery located in the center of downtown Fairfield, Connecticut, which became a mainstay and local tradition for more than 25 years. He then went on to open Sidetracks, his second concept in the city of Fairfield, a popular American Bistro with a festive railroad motif and precursor to the family-friendly chains that sprung up in the last two decades. In 1989, Febbraio opened a nationally acclaimed southwestern restaurant called Arizona Flats, specializing in Tex-Mex cuisine and setting the trend as the forerunner of many other restaurants of this type. Most recently, he spearheaded the opening of the first ever gastropub in Connecticut, the Gray Goose, an award-winning concept featuring a unique design and menu. Other concepts in the area include Spotted Horse, a tavern created from a centuries old historical mansion, as well as Little Goose, a mirrored extension of its sister restaurant, the Gray Goose.

Febbraio’s recent endeavors symbolize his continued enthusiasm and passion for the restaurant industry, along with his appetite to create and re-create a rarified culinary experience by using indigenous local and American ingredients. Though some of his restaurants share similar elements of design and esthetics, Febbraio and his team have the incredible capacity to keep each project and menu unique and one step ahead of industry trends.

He is involved with a number local organizations including Michael Bolton Charities, Fairfield Theater Company and Advisory Board for Fairfield County Bank and is an active member of Shorehaven Golf Club, as well as a passionate musician.
